I recently got a manual mk7 r and have been trying to learn heel and toe but the gas pedal being a little lower than the brake makes it pretty challenging, unless I’m braking hard. Hopefully I can get this good eventually. Do you have any mods?

Hopefully you’ve resolved the brakes temp issue. RS3 ducts and high temp fluid works very very well if you haven’t done that already.
